sorry my friend, but of the many varieties of jiaozi, that is my least favourite. (I think the veges are leek and lemon grass, BICBW) Now jiaozi w ground pork, cabbage, ginger and garlic is high on my list, but that's what my mother in law usually makes so go figure.
Of all the various foods common in China, two that I am always happy with are goubao rou and gongbao jiding. (Pork tenderized and breaded then deepfried, served with a sweet yellow sticky sauce. Chicken pieces stirfried with lots of veges and peanuts and peppers. Spicy to taste.) Oh, and Harbin red sausage. A lot like Beach Road kielbasa from back home. And Cucumber salad with fried peanuts and red onion, easy on the onion. And... well there's so much good food here, it's hard for me to keep the weight off.
