With the help of a friend, here is the solution, at least for the date of start of your tournament.
You create your tournament and choose any delay. Then you click on the small bue gear on left at top to modify your tournament. Then you get the field for the starting time almost on top of the page.
On left of the "T" is the date that you can change, on right is the time that you can change. I don't know what means the four last digits on right.

I have set up two different tournaments using the same trick as proposed by @Bob-lesponge, but I want to change other settings as well. I tried three different browsers (Waterfox, Chromium, and Firefox) so I don't think that is the issue. If I understand this thread correctly, "Advanced settings" has not been working for several days now? Unfortunately there seems to be absolutely no way to contact someone working at lichess ... :-(
I have got the main problem friends! In laptop or PC it has no problems, but it has this problem only in mobile, you can set up the timestamps if you want to keep it in future!
It is probably a bug... But no problem I am sure lichess admins will fix it soon!
