Its a matter of personal taste, some people want to play anonymously. So lichess don't want to force the issue here by showing his/her country flag like chess.com. Lichess respects someone's privacy.
Obviously if any player has added his country name, you can just move your mouse cursor on his/her name to see which country he/she is from.
