You can't do something against a person's personal interest so I don't think it's going to be allowed.

It's a good idea. You would have a match with two games and play both white and black against the same opponent. Then you get the following possible outcomes:
1. You win 2 games, you win with white and with black.
2. You win 1 game and have 1 draw
3. You win 1 and lose 1, or you play 2 draws. You're even.
4. Lose 1 game and 1 draw.
5. Lose 2 games.

I think many people would like such a double match, just like people take part in tournaments or play one team against another team instead of just playing single games. It adds a bit more story to the challenge. Some champions try hard to win with white and play for a draw when playing black. You can speculate in that kind of strategy yourself, just like the champions. Great idea! Here, we're talking about agreeing to play 2 games before we start playing.
I would suggest that such a double match will count as one game when it comes to rating points.
That should add some strategy to the game, like you can go for a draw in the last game if you have won the first game because it doesn't matter if the last game ends with a draw or a win, you will anyway win the double match.
If you have lost the first game, a draw in the last game is not good enough. You must play for a win. You may choose hazardous moves.
