Yea I had a problem today when I was playing bullet. Look lichess.org/nKSN8eMJOcsl ( I was already in a time pressure )

In the rare event that lichess times out because of server side issues, maybe it's sensible for the players who disconnect to be reimbursed their lost rating and let the winner keep their rating gain?

While I can understand the willingness to protect both players from ratings loss, I disagree, because this would artificially inflate system ratings over time. I'd recommend either adjudicating the game based on the position (which is probably CPU intensive and has its own issues of fairness) or an annulment of the game, as if it never happened.
