After capturing the knight the opponent left the game and I was offered the choice to claim victory or a draw. I accidentally misclicked and claimed a draw, Is it possible to fix this?

I usually try to wait until my opponent's clock expires (if I am able) when I am in a lost or drawn position. If they come back, fine. If not, I win legitimately.
