These days I get matched with much weaker opponents, even if I put conditions on my matching. Does anyone know why ?
i think your rating went up, so there are probably simply less opponents at your strength.

I understand but it hasn't gone up a lot, and these are much weaker, like 1600 and I'm 2300. Seemed very sudden too

it happened to me once. i accidentally changed the rating range, and then i only got weaker opponents.
