What are the benefits of resigning and/or accepting a draw?

I don't get people who play on when they're in a forced checkmate sequence and it's abundently clear to both players what the sequence is, started messing around at the end of game now when the next move is victory.

I understand people who play on to show what they would have done with their pieces had they not blundered their queen or something, but when you've completely dessimated all their pieces, I don't get it at all, just not interesting and a total waste of time.
