Should've I played for a win here? (I was playing White)

I don't think so. The game looked fairly equal from start to finish, and after move 26, it doesn't look like either side can make much progress. White has the better minor piece (knight), but black has the half open e-file and can place pressure on e3. The queenside is locked up with pawns, the center is well contested from both sides, and there is not much to do on the king side.
This is an even position. So you should continue play. Otherwise you could just as well agree to a draw in the initial position.
Nf3 is actually a mistake, there is a tiny trick after it, he should have played 4.Bc5, this attacks the f2 square and forces you to defend with pawn to e3, and then the bishop can't come to f4 to defend the pawn so he could continue with Nc6 and maybe Qe7 and win back the e5 pawn with a advantage.
I would offer/accept a draw in this position as white. The only player with winning chances here imo is black with pressure down the e-file, possibly with f4 tactics, but even then I think white can hold.
