Can anybody explain what caused Stockfish Level 8 to blunder into checkmate on move 1?
I think that it thinks quick and may occasionally miss some wins.
This only started happening today right after 0:00 UTC.

Huh, that's pretty funny. It's because Stockfish is now using the Lichess opening database to play the first few moves and the high-level Atomic opening book is extremely empty and contains this move. It probably should check the win rate and avoid moves with a low win rate or ignore it if there are so few moves.
