I love the french but the Caro-Kahn is also good. Both are much easier than the sicilian

@Kaimor Do you want to completely drop the Sicilian or do you still want to play the Sicilian? If you still want to play the Sicilian, I suggest what @WallaceTwo said, the French variation of the Sicilian.

If you like the Sicilian but want something a bit offbeat with less theory, you could try O'Kelly's variation 2...a6

I wouldn't recommend you to play the Sicilian Defence with your rating. You shouldn't start playing openings like the Sicilian when you have at least 2000 Elo in Reallife. In the meantime I would recommend you openings like Kings Pawn Game (1.e4 e5 2. Nf3 Nc6) or the Petrov Defense (1.e4 e5 2. Nf3 Nf6). I have learnt and get to know that symmetrical structures like in Petrov are easier to play for Black and you have less problems. Because you have to remember that symmetrical structures can't never be bad and are in the most cases near equality. If you survive the opening, you will receive a position that is still equal and you can try in the midgame and or the endgame to play for the whole point. The French is also a possible opening but you also have to know much theory and it says French is a little bit too passive and that is right. You also should know much theory and have good positional understanding of the positions. Concerning the Caro-Kann Defense you can claim that it is the better version of the French Defence because the bishop on c8 comes before the pawn chain. But nevertheless you have to know theory but not so much like in the French Defence. Also Caro-Kann and French are suitable when you want to play on a win but prefer calm positions and want to win in the mid- or endgame. Also most players says that Black has in Caro-Kann the most cases the better pawn structure.
