About a French defence position.

In this r1b1kbnr/pp3ppp/1qn1p3/3pP3/3P4/5N2/PP2BPPP/RNBQK2R b KQkq - 0 7 position
And in this r1b1kbnr/pp3ppp/1qn1p3/2ppP3/3P4/P1P2N2/1P3PPP/RNBQKB1R b KQkq - 0 6 position
the best move is known to be Nh6 (c4 is also available in the second position but not everyone want to play it).
As far as I understand the idea is to play Nf5 and put some more pressure in the d4 pawn.
White is not supposed, to play Bxh6, but what if he does? Obviously Qxb2 and Black gets a pawn, but in my oppinion since most of the times black's g pawn will take the bishop or be taken by the bishop it seems like it is dangerous for the Black king to castle kingside (there is no reason to talk about queenside castle right?)
So, my question is:
Why don't we put our knight to f5 through e7?
Stockfish says that after Nge7, Na3 is available in the first position while in the second position seems to be no difference.
What do you think? Can I play Ke7?

@T3SC the irony is I am a french player and I play nge7 in the second position don't care about the engine in first five moves it's too complicated for the engine itself

@Mahith1708 , yes it is complicated for the engine but still Na3 is available, should we try to avoid it?

DON'T WASTE YOUR TIME ANALYZING EARLY OPENING POSITIONS WITH THE COMPUTER.

Dont turn on engine until around move 8 too- sometimes even later

(Engines dont have a theoretical understanding of openings like humans do)

Ok, i get what you are saying about the engine, but still the question was about the position.
