Why do you want U1200 or U1000 (or U800 or U600) tournaments? If you want to get better at the game, then it is better to join the regular tournament. At the beginning you will lose some games against stronger players, that you can learn from and at the end you will get paired against people of your own strength, where you have a chance to win.
Well, some people know the rules and enjoy the game, but U1500 is still a very strong field for them. So I don't find the idea absurd. I just don't know if it works (enough public).

There could be beginner-friendly rapid tournaments. Some kids are still testing the pieces, you know. They can't afford a piece being taken every time it's hanging. :P

It's nice to think of kids, but I also have adults friends in that situation, losing nearly every game in U1500.

i'm 1417 Glicko2 rating, the diference between a 1100 player and a 1500 player is really considerable, i can say that if a 1100 player plays against a 1500 player, the 1500 player will win 10 times for each win of the 1100 player.
Perhaps U 1200 tournament could be organized but that s it, not any lower. There are not that many people under 1000 and those that are should have a good chance against weaker than 1200 players.
