If you could change the one rule of chess, what would it be?

Each player would be advised by Q from TNG once during the game. Players do not get to choose when, he just shows up and may be selling you swampland in Alaska.

Allow slapping opponents (with a closed fist, holding a metal wrench) who wont shake hand before and after the game.

A rule of Chess that could be considered is, shaking hands properly at the beginning as opposed to alot of the token gesture hand shakes observed, where they barely make contact ! Which in my view defeats the purpose of doing it at all.
The movement of the knight is far too confusing for me. I would therefore delete this piece without replacing it and play it on a smaller board with 6x6 squares.

The arbiters could rate handshakes and if its considered too limp. the offender gets slapped in the face with a stockfish. Second offense is with Surströmming.

In professional shogi, a player who makes an illegal move loses immediately.
interestingly, for top players most of the time they would play exactly the same as they do now. Leaving your king in check would be an instant loss, so they would avoid it at all costs. The one thing that would change is the art of the draw. That would disappear completely. A player who was in a stalemate position would be forced to move into check on the next move and lose the king.
