You can go fancy with a mix and match of gruyere, gorgonzola, raclette,or fontina and they can be great!
But stick to the basics - freshly grated American cheese (or a young cheddar) mixed with sharp or extra sharp cheddar. Bake it with butter and milk, and get some breadcrumbs for a crunchy top and life is good!
