You can see that they still had a very small amount of time left. If it looked to you as if there time must have run out already, that's probably because of lag and lag compensation, i.e. because it takes a little while until their move got to the Lichess server and to you but it still counts as long as it came in in time.

That's why you should never stop playing unless the game is actually declared over, i.e. you hear the game over sound and it shows the game as over in the moves list.
