I think it would be great if you could customize the quick pairing panel with your own set of time control settings and chess variants.
The point of "quick pairing" is that you get a quick pairing, this wouldn't work if everybody customized this differently and chose different time controls.

The same idea differently: would be nice to have a panel where a user can set and recall couple of the game settings he uses the most.
Plus (as you have pointed out one's custom settings should not be on the quick pairing panel): would be nice to have more options on the quick pairing panel (eg: antichess, crazyhouse)
