why was this not a draw??

I just lost this game on time and white did not have mating material, just a knight...?
Lichess uses something close to Fide rules, not the more traditional online rules (which are closer to USCF rules).

The latter just say some material constellations for the side that still has time remaining are insufficient, no matter what else is on the board.

In Fide rules, a flag is only a draw if there is no possible sequence of moves by which the person who ran out of time could be checkmated.

Here, there are many sequences of legal moves that end in mate of the black king.

They're ridiculous sequences, sure, but that's the rule :)

You lost on time.
It is only a draw if there is no series of legal moves leading to checkmate.
Here there is such a series of legal moves

If you do not like this, then play with increment.
