Actually, you can :
1- Go to analysis board.
2- Practice with computer (a button beside the openings book).
Since it's too strong, you can't play it like the other bots because you'll simply lose everytime, but it's meant to be a perfect player to practice traps/openings/endgames positions with.

On lichess you play against Stockfish 12, which is current (latest) version of Stockfish. There is no better version than this. When creating game you select level, level 8 means engine is playing at full strength. Lower levels engine sometimes plays mistakes and blunders, level 1 being weakest.
No need to use practice with computer, select Play with computer from main page.

yeah level 1 gives you a queen when they have 5 mates in one, but even though level 8 can't premove, it still manages to mate me in 15 seconds
