I don't think there's an ELO rating for each stockfish level. When you choose a level, you will be choosing the likeliness of mistakes Stockfish will be doing intentionally. That's why I don't really play engines.
According to a past post in the Lichess forum, the ELO ratings for Stockfish levels 4, 5, 6, 7, and 8 are 1600, 1700, 1900, 2200, and 2600 respectively. - :]
That's not Stockfish level rather the AI level here on Lichess.

I am probably rated around 1600. I am trying to finding a level that I can have a competitive game with the Stockfish computer.

1600 lichess rating, fide rating, some other system?
When I've played stockfish here (not for a while) I could usually win a fair number of games against level 5, and win occasionally against level 6. Never played 7 or 8. You can look at my ratings and maybe get some idea based on that. Pretty sure they used to display a rating for each stockfish level but stopped doing that a while ago.
Of course, a simple approach would be to just play a number of games against each level and you'll quickly figure out which one best suits your needs!
When I say my rating is 1600 on Lichess, it is a guess estimate based on my results playing casual games on this platform. I have not worked up the courage to play rated games yet.
