How do engines work in ultrabullet? They need time to calculate the best move.

Engines can calculate much faster than humans, and have much faster "reaction time" to understand what move an opponent played. An engine that can only spend 100 milliseconds on each move will play much worse than one that can spend thirty seconds per move, but it will still be very very strong compared to human players at the same time control.
Strong engines are not unbeatable at very fast time controls they way that they are at longer time controls - they may have blind spots at very low depth that strong human players can try to exploit - but they are still very, very strong.
congrats :) when you're starting out, level 1 is definitely a challenge. keep going!
