Is it possible that I can beat stockfish level 7 because my computer is hot .../slow, causing the engine to run at lower rating? or am i just playing good games lol. Does the engine always run at the same rating even if the computer sucks?

Stockfish levels make it sometimes randomly choose moves it thinks are worse. It will still play stronger if you give it more time or hardware to use, levels don't have a fixed playing strength.
