5...Qc7 is a great line in the line Sarg0n mentioned, I play it as well. Recommended by GM Sam Shankland.

In the game from post #4, Qc7 doesn't make as much sense. White hasn't committed to c3. This allows Nc3-b5 ideas. Without analyzing with a computer, I think 8.Nb5 Qb6 9.Bf4 Na6 and black is uncomfortable.

As for the topic of the thread, minority attacks, I usually wait until after I'm castled to initiate them. This way, my king is safe, and both my rooks can be mobilized to help aid the break/control the resulting open files. That game from #4 is a good example of that.
